Sonhos (Christmas dreams) are one of my favourite Christmas delicacies served in Portugal. They are simply delicious and irresistible. I am sure that you will aggree with me after preparing my recipe.
- ½ cup water
- 1 tablespoon butter
- 1 cup all-purpose flour
- 4 large eggs
- Vegetable oil for deep-frying
- All-purpose flour
- Confectioner’s sugar
- Boil the water, butter and a pinch of salt over medium-high heat. Add the flour and stir vigorously with a wooden spoon to form a ball. Take the pan off the heat and place it in the sink half filled with water.
- After cooling the mixture a bit, beat in the eggs, one by one. Continue beating to aerate the dough. When ready, deep-fry spoonful of the dough in hot oil until they acquire a golden color. Remove and drain on paper towels.
- Before serving, dust the sonhos with a mixture of confectioner’s sugar and cinnamon. A word of advice: they taste even better if you serve them warm.
