Recipe of sardines with escabeche sauce
The recipe of sardines with escabeche sauce is highly appreciated in Portugal and is mostly served with a glass of our own white Vinho Verde.

- 20 sardines
- 2 cloves of garlic
- 4 onions
- 4 dl of olive oil
- 2,5 dl of vinegar
- 2 cloves
- 1 spring of parsley
- 1 teaspoon of paprika powder
- Salt and pepper
- After gutting and cleaning the sardines, fried them on the olive oil. Reserve the sardines on a plate.
- Add the onion and the garlic, both sliced, to the olive oil. Sear the onion and then add the paprika powder and the vinegar.
- Dress the escabeche sauce with the cloves, the parsley, salt and pepper. Let it refine and pour the sauce on the sardines. Finally serve this recipe of sardines.
