Portuguese roast lamb recipe is a must dish at every Portuguese table at lunch on Easter Sunday. It goes magnificently with a Douro red wine

This Portuguese roast lamb recipe is a must at our Easter tables as the lamb is the oldest symbol of this season. In the Old Testament Easter was celebrated with unleavened breath and with the sacrifice of a lamb; on the other hand, Moses celebrated the freedom of the Jewish people by immolating a lamb. As for Christians, the lamb symbolizes Jesus, the Lamb of God. Roast lamb is also a very popular and traditional dish of Portuguese Christmas.
