This Portuguese roast lamb recipe is a must at our Easter tables as the lamb is the oldest symbol of this season. In the Old Testament Easter was celebrated with unleavened breath and with the sacrifice of a lamb; on the other hand, Moses celebrated the freedom of the Jewish people by immolating a lamb. As for Christians, the lamb symbolizes Jesus, the Lamb of God. Roast lamb is also a very popular and traditional dish of Portuguese Christmas.

Ingredients
  • 1 medium lamb
  • 125 g margarine
  • 100 g bacon
  • 4 onions
  • 4 garlic cloves
  • 2 bay leaves
  • 1 sprig of parsley
  • 2.5 dl white wine
  • 1 tsp. paprika
  • 500 g potatoes
  • Sal and pepper to season
Instructions
  1. Mix 2 chopped onions, the garlic cloves also chopped, 50 g margarine, the paprika, 1 dl white wine, salt and pepper. Spread this mixture on the lamb and let it marinate for about 1 hour.
  2. Then, slice the onions and place them in a Pyrex plate; add the lamb, the parsley, the bay leaves, and the remaining white wine. Wash, cut the potatoes in four and place them around the lamb. Spread knobs of the remaining margarine on the plate and cook in the oven for about 1 hour, soaking in the cooking sauce every now and then. Finally serve the Portuguese roast lamb recipe.
