Sardines with escabeche sauce is a delicious dish highly appreciated by the Portuguese and preferably served with white Vinho Verde.

  • 20 sardines
  • 2 cloves of garlic
  • 4 onions
  • 4 dl of olive oil
  • 2,5 dl of vinegar
  • 2 cloves
  • 1 spring of parsley
  • 1 teaspoon of paprika powder
  • Salt and pepper
  1. After gutting and cleaning the sardines, fried them on the olive oil. Reserve the sardines on a plate.
  2. Add the onion and the garlic, both sliced, to the olive oil. Sear the onion and then add the paprika powder and the vinegar.
  3. Dress the escabeche sauce with the cloves, the parsley, salt and pepper. Let it refine and pour the sauce on the sardines. Finally serve this recipe of sardines.
