Bolo rei, an amazing fruit cake, is the the king of the Christmas desserts in Portugal. Some even say that without Bolo-rei there is no Christmas.

  • For the dough:
  • 1 kg flour
  • 100 g sugar
  • 200 g margarine or butter
  • 5 eggs
  • 50 g yeast
  • 2 cl port
  • 250 ml milk
  • 1 teaspoon salt
  • 50 g candied orange peel
  • 50 g of ground pine nuts
  • 50 g ground walnuts
  • 100 g raisins
  • For the topping:
  • 50 g candied cherries
  • powdered sugar
  • 1 egg yolk
  • 100 g dried fruit
  1. Heat half of the milk and add it half of the yeast and ½ teaspoon salt. Place it on a warm place.
  2. Mix the remaining yeast with all the other dough ingredients and add it the yeast dissolved in the warm milk. Mix well and let the dough rest for about 40 minutes.
  3. Shape the dough into a thick roll and then form a ring.
  4. Distribute the candied cherries and dry fruits on the dough brush the cake with the yolk. Place it in the oven for about 30 minutes.
  5. Sprinkle the bolo-rei with powdered sugar, before serving.
