Sonhos (Christmas dreams) are one of the most popular Christmas desserts in Portugal and it is always present at our tables on Christmas Eve.

  • ½ cup water
  • 1 tablespoon butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • Vegetable oil for deep-frying
  • Salt
  • All-purpose flour
  • Confectioner’s sugar
  • Cinnamon
  1. Boil the water, butter and a pinch of salt over medium-high heat. Add the flour and stir vigorously with a wooden spoon to form a ball. Take the pan off the heat and place it in the sink half filled with water.
  2. After cooling the mixture a bit, beat in the eggs, one by one. Continue beating to aerate the dough. When ready, deep-fry spoonful of the dough in hot oil until they acquire a golden color. Remove and drain on paper towels.
  3. Before serving, dust the sonhos with a mixture of confectioner’s sugar and cinnamon. A word of advice: they taste even better if you serve them warm.
