Codfish in olive oil recipe – Bacalhau a lagareiro
Bacalhau a lagareiro (codfish in olive oil) is one of the Portuguese favorite codfish recipes. Easy to prepare is ideal for special occasions.
Codfish in olive oil is one of my favorite Portuguese recipes of codfish. The combination of the unique taste of this fish with the hot olive oil, flavored with garlic and onion is absolutely amazing.
- 4 dry codfish steaks
- 3 dl of olive oil
- 4 cloves of garlic
- 1 kg of small potatos
- red pepper
- Leave the cod to soak, placing it on a recipient with water for 48 hours, changing the water four or five times. Leave it in the refrigerator. Take the codfish from the water and dry it. Place the codfish on a tray. Add the olive oil and the peeled cloves of garlic. Place the tray in the oven. Occasionally, use the sauce to moister the fish.
- Wash carefully the potatoes with the skin and place them on another tray. Cover them with salt and place them in the oven, already heated at 200ºC, for about 40 minutes. As soon as they are roasted, take them from the oven and punch them slightly.
- Serve the codfish with the potatoes and the olive oil, decorated with chopped red pepper and parsley.
