Bacalhau a Bras is a very easy to prepare codfish recipe, much appreciated by the Portuguese, who can’t live without it in festive occasions.

Bacalhau a Bras is a very easy to prepare codfish recipe, much appreciated by the Portuguese, who can't live without it in festive occasions

Ingredients
  • 600 g of salted dry codfish
  • 1 kg of potatoes
  • 2 cloves of garlic
  • 3 onions
  • 1 dl of olive oil
  • 6 eggs
  • salt
  • pepper
  • parlsey
  • oil-cured black olives
Instructions
  1. Leave the cod to soak, placing it on a recipient with water for 48 hours, changing the water four or five times. Leave it in the refrigerator. Take the codfish from the water and boil it for about 15 minutes. Drain, cool and flake the fish, eliminating any bones. Reserve.
  2. Peel and cut thinly the potatoes. Fried them and place them on absorbent paper to eliminate the oil.
  3. Mince the cloves of garlic; slice the onion into half-moon shapes. Fry both ingredients lightly on the olive oil. Add the codfish and the potatoes. Season the preparation with salt and pepper.
  4. Whisk the eggs with salt and pepper and add them to the fish and potatoes. Stir occasionally until the eggs are softly set. Transfer to a serving plate, sprinkle with parsley and serve, decorated with black olives.
Notes
The preparation time is without the soak procedure.
